valentine cookies (a la holly-da)

The recipe for the cookies!!

My very best childhood friend, Holly Darr, or as we affectionately called her, Holly-da, is responsible for sharing this recipe with me. We rolled out these cookies together in middle school, and my family made them for many years following. I continued the tradition with my own children for the last 20 years. Thank you Holly-da!

So in my last post, I got all excited about some fancy decorating options. Because Pinterest. Some days I love Pinterest, some days it overwhelms me. I am just a normal human. I don't have time to professionally decorate Valentine cookies. I mean, seriously. I did muster up the energy to make the standard cookies I am comfortable with, but I hope they are not a major disappointment. 

I mean they are pretty enough, right? And who cares anyway... they are delicious. And this isn't a competition.

Butter Cookies with Frosting

Cookies:

Cream 1 C butter and 2/3 C sugar

Beat in 1 egg

Combine and add 2.5 C flour, 1/2 t salt

Add to final 1 t vanilla

Chill dough 3-4 hours before rolling

*Roll out on wax paper or flour. Use flour on rolling pin also, and move quickly. As the dough gets warmer, it gets sticky!

Bake in 350 degree oven for approx 8 min. Do not overcook!

Frosting:

2 C confectioner's sugar

1 t vanilla

1/4 t cream of tartar

2 eggwhites

Combine ingredients and beat vigorously until mixture is light and stands in peaks. 

Add color.. :)

Just in time for Valentine's Day! Heart cookies are the perfect gift for anyone. Except dieters. These little numbers do not qualify as paleo, and do not fit into any other diet plan that I know of :) Or should I say :(
